Vor meiner letzten Reise nach Tel Aviv im vergangenen April liess ich mich einmal mehr von\u00a0<\/span>Jerusalem<\/a>, meinem absoluten Lieblingskochbuch der beiden Herren\u00a0<\/span>Yotam Ottolenghi<\/a>\u00a0und\u00a0<\/span>Sami Tamimi<\/a>, inspirieren. Ich wollte unbedingt Sumach und nat\u00fcrlich\u00a0<\/span>Zaatar<\/a>\u00a0am Shug Ha Carmel kaufen.\u00a0<\/span><\/p>\n

Moshe vom\u00a0<\/span>Pereg<\/a>\u00a0Gew\u00fcrzstand ist ein guter Verk\u00e4ufer. Und so verliess ich den Stand nicht etwa mit einer Gew\u00fcrzdose voll Sumach, sondern mit einem ganzen Sack davon. Ganz zu schweigen von Zaatar, Kreuzk\u00fcmmel, Pekann\u00fcssen, Pinienkernen und noch vieles mehr.\u00a0<\/span><\/p>\n

Sumach kommt von den Beeren eines wild wachsenden Busches, der in der warmen Mittelmeerregion w\u00e4chst. Sumach hat nicht nur eine unvergleichlich intensive Farbe, auch der Geschmack ist sehr speziell. Es schmeckt s\u00e4uerlich, herb. Ein bisschen wie Sauerampfer aber anders. Oder wie Zitronenzeste. Aber nicht ganz. In der Orientalischen K\u00fcche wird Sumach oft verwendet. In Eint\u00f6pfen,\u00a0Dips<\/a>, Salaten, zu Fleisch, Fisch, Gem\u00fcse.\u00a0<\/span><\/p>\n
